Meat with Bell Peppers and Tomatoes

Amazingly aromatic and delicious! Incredibly tender! Meat with bell peppers and tomatoes is a perfect option for a family lunch. It doesn’t take much time or effort to make. The meat absorbs the flavors and aromas of the vegetables, and the acidity of the tomatoes makes it very soft and tender.

Preparation
Step 1
You can use any type of meat: pork, beef, chicken, or veal. I’m using pork. Choose boneless cuts like shoulder, ham, or tenderloin. You can use canned tomatoes in their own juice, fresh tomatoes, or both.
Step 2
Cut the meat into small pieces. Heat a skillet until hot and add a bit of vegetable oil. Add the meat and fry for 5–7 minutes until it starts to brown.
Step 3
Meanwhile, peel the onion and rinse it under cold water to prevent eye irritation while chopping. Slice it into half-rings or smaller pieces.
Step 4
Add the chopped onion to the skillet with the meat. Stir and fry together for another 3–4 minutes until the onions release a pleasant aroma.
Step 5
Clean the bell pepper by removing the core and slice it into strips. Add it to the skillet.
Step 6
Season with salt and your favorite spices. Pour in some hot water. Cover the skillet with a lid and simmer on low heat for about 15–20 minutes until the meat softens.
Step 7
Mash the canned tomatoes slightly and add them to the skillet. Simmer for another 5–7 minutes, then remove from heat.
Step 8
Meat with bell peppers and tomatoes is ready. Serve as-is or with a side dish of your choice. Enjoy!
