Preparation
Step 1
You can use any type of ground meat or mix several kinds. Choose cheese to your liking.
Step 2
I’ll be using boiled forest mushrooms, but you can replace them with mushrooms like champignons - no need to boil those, just slice and cook. Peel and finely chop the onion. Heat a frying pan, pour in a bit of oil, and sauté the chopped onion for about 1 minute. Then add the chopped mushrooms and fry everything together for several minutes until the liquid from the mushrooms evaporates.
Step 3
Add salt and spices to the minced meat and mix well. Beat the meat mixture against the bowl a few times so it becomes denser - this helps the nests hold their shape during baking.
Step 4
Use any ovenproof dish (I use a ceramic one). Form small balls from the minced meat and place them in the greased baking dish. Make a small indentation in the center of each and brush it with mayonnaise.
Step 5
Fill each nest with the mushroom mixture. Be generous with the filling.
Step 6
Grate the cheese and generously sprinkle it on top of each nest. Bake in a preheated oven at 350°F (180°C) for 30-40 minutes, depending on your oven.
Step 7
During baking, the meat will release some juice, part of which will evaporate, while the cheese melts and turns golden. Transfer the ready meat nests to a plate and serve hot. Enjoy your meal!
