Meat and Cabbage Pie in the Oven

A simple and delicious everyday pastry for any table! Meat and cabbage pie in the oven turns out so hearty and filling that it can replace a family dinner or even lunch. It also goes perfectly with first courses like soup, shchi, or borscht.

Preparation
Step 1
Kefir of any fat content can be used. Sift the flour in advance to enrich it with oxygen - this makes the dough lighter. The meat filling can be made from any type of meat.
Step 2
To prepare the dough, pour kefir and vegetable oil into a bowl. Add sugar, baking soda, and salt. Stir. The soda will start reacting with the kefir.
Step 3
Gradually add sifted flour and knead the dough. At first, it’s convenient to use a whisk, later you’ll need to knead with your hands. Judge the amount of flour by the dough’s consistency.
Step 4
The dough should be very soft, elastic, and almost non-sticky. Cover with plastic wrap and let it rest.
Step 5
For the filling, peel and finely chop the onion. Heat a skillet, pour in some vegetable oil, and fry the onion for about a minute until translucent.
Step 6
Add ground meat, mix with the onion, and fry for 2-3 minutes until the color changes.
Step 7
Thinly shred the cabbage and add it to the skillet with the meat. Cover and cook over low heat for 3-5 minutes.
Step 8
During this time the cabbage will soften and reduce in volume. Season with salt and spices to taste. I use paprika and some dried basil. Mix everything and simmer covered for 15-20 minutes. If there’s not enough moisture, add a little water to prevent burning.
Step 9
Divide the dough into two uneven parts. Spread the larger part into a baking pan (about 9.5 inches / 24 cm), forming small edges.
Step 10
Place the prepared filling onto the dough. You don’t need to let it cool.

Roll out the smaller piece of dough into a circle. You can make a patterned top or simply cover it, cutting a small hole in the center for steam to escape.

Cover the filling with the rolled-out dough and pinch the edges. Brush the surface with egg yolk. Bake in a preheated oven at 350°F (180°C) for 25-30 minutes (adjust depending on your oven).
Step 13
The finished pie should be golden brown. Remove it from the oven, take it out of the pan, let it cool slightly, and serve. Enjoy!
