Mashed Potatoes with Zucchini

So tender and with a light buttery note. Impossible to resist! Mashed potatoes with zucchini is a healthy vegetable side dish for any table. It’s also great for kids, as zucchini is a diet-friendly vegetable.

Preparation
Step 1
Peel the potatoes in advance and rinse them under running water to remove any dirt. Choose young zucchini with thin skin.
Step 2
Wash the zucchini and trim both ends. Young zucchini has immature seeds and can be diced immediately. If you're using a mature zucchini, peel it and remove the seeds.
Step 3
Cut the peeled potatoes into chunks and place them in a pot. Cover with water, bring to a boil over medium-high heat, and cook for 5 minutes.
Step 4
Add the diced zucchini to the pot with the potatoes. Cook for another 10 minutes. Add salt. Both the potatoes and zucchini should be fully cooked by then.
Step 5
Drain the water from the vegetables and add butter. It will start melting immediately. Mash the vegetables with a potato masher.
Step 6
Pour warm milk into the pot and continue mashing until smooth.
Step 7
The texture will become creamy. If you prefer an ultra-smooth puree, you can use a blender, but it’s not required. The zucchini-potato mash is ready! It pairs perfectly with meat or fish dishes. Garnish with fresh herbs before serving. Enjoy!
