Mashed Potato Flatbreads in a Skillet

Preparation
Step 1
Use cooled mashed potatoes. Leftovers from the previous day work well. If making fresh, let it cool completely. Make sure the mash isn’t watery.
Step 2
Place the required amount of mashed potatoes into a large bowl. Add the eggs one at a time, mixing well after each addition. Watch the texture - the dough shouldn’t be too runny. One large egg may be enough.
Step 3
Grate the cheese (hard variety) finely and add it to the bowl. Add pressed garlic. Choose cheese to your taste. Add salt and spices. Keep in mind that cheese and mashed potatoes may already contain salt. I added paprika and dried herbs. Mix everything together.
Step 4
Gradually add flour and knead the dough. You may need a bit more flour than indicated. Mashed potato dough absorbs a lot of flour - don’t overdo it.
Step 5
Once the dough is thick enough, stop adding flour. It will still be sticky but don’t over-flour it. To form flatbreads, use gloves, a bag, or grease your hands with oil.
Step 6
Sprinkle some flour onto a plate. Scoop a portion of dough with a spoon, roll it in flour, and shape it into a flatbread. It’s easiest to shape directly on the plate.
Step 7
Heat a little vegetable oil in a skillet and place the flatbread in. You can also cook them in a dry skillet.
Step 8
Fry on low heat for 2-3 minutes per side. Timing depends on skillet type and flatbread size.
Step 9
When golden and cooked through, stack them on a plate. They’re delicious both warm and cold. Serve with sour cream. Enjoy!
