Mandarin Mozzarella Crunch Salad with Chicken and Croutons
Tasty, bright, with chicken fillet and sweet corn! This salad with mozzarella, croutons, and mandarins is simple and quick. Thanks to the vegetables it’s light yet filling, and it will decorate any festive table.

Preparation
Step 1
How to make the salad with mozzarella? Prepare all ingredients. Wash and pat dry the vegetables and herbs well. You can buy croutons, but they taste better homemade. Any white bread works, and stale bread is the easiest to slice.
Step 2
Cut the bread into croutons as you like; I prefer thin sticks. Pour 2 tbsp vegetable oil into a skillet and heat it. Add the bread, salt it, and sprinkle with seasoning to taste (I used a spicy pepper seasoning). Fry over medium heat until golden. Add grated garlic, stir, and fry for a couple more minutes. Remove from the heat and cool.
Step 3
Rinse the chicken fillet (I used breast), pat dry, and cut into thin strips. Sprinkle with sesame seeds and mix.
Step 4
Pour the remaining vegetable oil into the skillet and heat over medium. Add the chicken and fry for 5 minutes. Add 50 ml (about 3 tbsp) water and simmer until the water evaporates and the meat is cooked through. Remove from the heat and cool.
Step 5
Shred the napa cabbage into thin strips and put it into a bowl.
Step 6
Remove seeds from the bell pepper and cut into thin strips. Add to the bowl with the cabbage.
Step 7
Drain the liquid from the canned corn and add it to the salad. If you won’t use the corn right away, spoon some out as needed, and transfer the rest (if it’s in a metal can) into a glass container. For extra bite, you can add half an onion, sliced.
Step 8
Mix everything and drizzle with mandarin juice. This adds a light aroma and a pleasant tang.
Step 9
Add the cooled chicken fillet to the bowl and mix.
Step 10
Transfer the salad to a serving plate and add the mozzarella. Mini mozzarella works best, but if you don’t have it, just slice regular mozzarella.
Step 11
Drizzle with mayonnaise. If serving for a holiday, don’t dress it fully - pipe a light mayonnaise grid on top instead. The salad will look nicer, release less juice, and keep longer. It’s better to serve extra mayonnaise on the side in a separate dish.
Step 12
Scatter the croutons over the top and sprinkle with chopped herbs. The salad with mozzarella and mandarins is ready.
