Korean-Style Chicken Gizzards

To avoid eye irritation while slicing onions, rinse the onion and knife with cold water. Rub your cutting board with lemon to prevent onion odor absorption.
Preparation

Prepare all the required ingredients.
Step 2
Wash the gizzards thoroughly, trim off excess fat, and remove the membrane.
Step 3
Place the gizzards in a small pot, cover with water, and bring to a boil. Skim the foam, add salt, and simmer over low heat for about 30 minutes.
Step 4
While the gizzards are cooking, peel and cut the carrot into thin sticks.

Peel and dice the onion.
Step 6
In a heated skillet, pour vegetable oil, add the onion and carrot. Sprinkle 1 teaspoon of Korean carrot spice mix and fry on high heat for 2 minutes, stirring occasionally.
Step 7
Wash the bell pepper, remove the seeds and stem, and cut into thin strips.
Step 8
Add the bell pepper to the skillet with the onion and carrot. Sauté the vegetables for 2-3 minutes. Reduce the heat, cover the skillet, and simmer on low for about 10 minutes.
Step 9
Meanwhile, remove the gizzards from the pot with a slotted spoon. Let them cool and drain excess liquid. Slice them into thin strips.
Step 10
Add the sliced gizzards to the vegetables. Add 1 more teaspoon of Korean seasoning, mix well, and cook for another 2 minutes. Press the garlic or grate it finely. Mix soy sauce with sugar, vinegar, garlic, and sesame seeds. Pour this mixture over the gizzards and vegetables. Add finely chopped herbs, mix, cover with a lid, and simmer on low for 2-3 minutes.
