Khachapuri with Kefir and Cottage Cheese on a Skillet

Original, delicious, appetizing, for the whole family! Khachapuri with Kefir and Cottage Cheese on a Skillet is one version of the beloved Georgian dish. Instead of traditional cheese, cottage cheese is used. These khachapuri are very easy to prepare at home without an oven.

Preparation
Step 1
First, prepare the dough. Gather the ingredients. Use full-fat kefir for tastier dough. Take kefir and egg out of the refrigerator beforehand to bring to room temperature; this improves dough quality. Use refined, odorless oil.

To make dough: sift flour into a deep bowl. This removes debris and adds oxygen, making the dough fluffier.
Step 3
In another container, pour warm kefir. Add the egg, vegetable oil, baking soda, salt, and sugar. Mix well with a fork.
Step 4
Gradually add liquid to the flour, mixing with a fork. When all liquid is added, knead the dough by hand until smooth and uniform. The dough should barely stick to your hands. Shape it into a ball, cover with plastic wrap or a bag, and let rest for 15-20 minutes at room temperature - this will make the dough more elastic and easier to work with.

While dough rests, prepare filling. Choose full-fat cottage cheese for better taste. Use high-quality, natural product without milk fat substitutes. Spices are optional; salt is enough, but herbs can be added.
Step 6
To make filling: place cottage cheese in a bowl, add salt and spices. Mix well. Filling is ready.
Step 7
Divide rested dough into 6 equal parts. Roll each into a round flatbread on a floured surface. No need to roll too thin - about 5-7 mm is enough.

Place a couple of spoons of filling in the center of the flatbread.

Gather the edges of the flatbread to the center, forming a knot. Pinch well to seal.
Step 10
Carefully roll the prepared dough; try not to tear the thin dough. Some tearing is okay and won’t affect taste.

Heat a skillet over medium heat. Place khachapuri in the pan.

Fry until golden brown, about 5 minutes per side.

Brush hot khachapuri with butter immediately after cooking. Serve cut into segments. Enjoy!
