Khachapuri from Lavash with Cottage Cheese on the Skillet

A wonderful snack with no fuss, what could be better? Khachapuri from Lavash with Cottage Cheese on the Skillet is a delicious dish for any occasion: for a beer party, picnic, family breakfast or dinner, or for a festive table. Children will especially love this treat.

Preparation
Step 1
Start by preparing the necessary ingredients from the list. You can choose the type of cheese according to your taste. For example, you can replace regular cheese with mozzarella, sulguni, or brynza. You can also use wheat rolls instead of Armenian lavash.
Step 2
Start by preparing the filling. Place the cottage cheese in a bowl and mash it with a fork. Any type of cottage cheese will work for the filling. Even lumpy cottage cheese will become softer and more pliable while frying. I am using block cottage cheese, which is quite moist and juicy.
Step 3
Grate the cheese on a coarse grater.

Wash the parsley, dry it, and finely chop it. You can optionally replace or add other herbs, such as green onions, dill, cilantro, or use a mix of different herbs.

Whisk the egg with a fork until smooth.
Step 6
Add the grated cheese, herbs, and vegetable oil to the cottage cheese. Season the filling with salt and pepper to taste, and mix everything together.

Cut the lavash into strips 7-8 cm wide. I got 8 strips, each about 40 cm long. Lavash dries quickly, so it’s best to cut the strips last, once the filling is ready. Before this, store the lavash in a tightly sealed bag. Place a little filling on the edge of each strip.
Step 8
Roll the lavash strips into triangles. Ensure that all edges are wrapped in lavash so that the filling doesn’t leak out of the envelope.
Step 9
Brush the edges of the lavash with the beaten egg and form the triangles.
Step 10
Shape the remaining khachapuri in the same way. If desired, you can make square or rectangular-shaped preparations.
Step 11
Heat vegetable oil in a skillet over low heat. There should be enough oil to cover the entire bottom of the skillet. Place the lavash preparations in the skillet and fry for 2-3 minutes on each side until golden brown.
Step 12
Transfer the finished khachapuri to a plate and serve immediately. Enjoy your meal!
