Preparation
Step 1
Prepare the ingredients. The kefir and eggs for the batter should be at room temperature. You can use cream of any fat content, and vanilla sugar can be used instead of vanillin. Take the butter out of the refrigerator beforehand so it can soften. Preheat the oven to 355°F.
Step 2
Combine the dry ingredients in a bowl: add the semolina and sugar, then sift in the flour and baking powder. Mix thoroughly.
Step 3
Pour in the kefir and mix until smooth.
Step 4
Beat the eggs separately until well combined; they do not need to become very pale or fluffy.
Step 5
Add the beaten eggs to the batter and mix. Leave for about 10 minutes so the semolina can absorb some of the liquid.
Step 6
Grease a baking pan with butter and pour in the batter. The original recipe uses an approximately 7-inch round pan. Bake in the preheated oven for 40–50 minutes.
Step 7
Check the cake with a wooden skewer; if it comes out dry, the cake is done. Remove the pan from the oven and leave the cake to cool in the pan.
Step 8
Prepare the cream by combining the cream, cottage cheese, sugar, vanillin and softened butter.
Step 9
Beat the cream with an electric mixer. The mixture should remain slightly loose; its consistency will depend on the fat content of the cream and the texture of the cottage cheese. You may need slightly more or less cottage cheese.
Step 10
Remove the cooled cake from the pan and cut it horizontally into 2 or 3 layers.
Step 11
Assemble the cake by spreading the cream between the layers. If desired, you can also soak the cake layers with sweet syrup or add layers of berries or fruit.
Step 12
Cover the cake with coconut flakes and leave it for about 2 hours so the layers can absorb the cream, then refrigerate until serving. Decorate with berries, fruit, nuts or other toppings if desired.
