Juicy Zucchini Rolls with Ham Deep-Fried

Preparation
Step 1
Start with the zucchini. From two zucchinis weighing about 500 g (17.6 oz) each, you’ll get about 25 rolls. Slice the zucchini into strips about 3-4 mm (⅛ inch) thick. Don’t cut them too thin or they’ll disappear when fried. Do not salt them, since both ham and cheese are already salty.
Step 2
For two zucchinis, you’ll need about 600 g (1.3 lb) of ham. You can buy pre-sliced or cut it yourself.
Step 3
You’ll also need about 400 g (14 oz) of your favorite hard cheese. Again, pre-sliced cheese works fine.
Step 4
Assemble the rolls: lay a slice of ham and cheese on each zucchini strip, leaving 4-5 cm (2 in) free at one end, and roll tightly. Secure with skewers or toothpicks.
Step 5
Prepare the coating. In a bowl, lightly beat 4 medium eggs. Add ½ teaspoon salt, 50 ml (3½ tbsp) milk, and any seasoning you like. Mix well. Prepare 250-300 g (about 2 cups) breadcrumbs.
Step 6
Dip each roll into the egg–milk mixture, then coat generously with breadcrumbs. While coating, preheat the frying oil.
Step 7
The amount of oil depends on your pan - the rolls should be almost fully submerged while frying. Fry for about 3 minutes, turning occasionally. Frying longer will make the zucchini less noticeable. Remove and drain on paper towels.
Step 8
The rolls come out tender, juicy, and appetizing. They taste great both hot and cold. Enjoy your meal!
