How to make melted cheese from curd cheese at home? Prepare the ingredients. For the cheese, it’s best to use market or farm curd cheese. With store-bought curd cheese, small unmelted grains may remain in the cheese. Choose a fat content of at least 9%.

Take a saucepan with a thick bottom - this is important so that the cheese mixture doesn’t burn while cooking. Put the curd cheese into the saucepan, add the egg, pour in the milk. Add baking soda and salt. Adjust the amount of salt to your taste. Blend everything together with an immersion blender. You should get a smooth, thick mass.

Place the saucepan with the curd mixture over low heat. Stir the mixture constantly with a spatula as it cooks.

It will gradually become thinner and thinner and eventually turn into a smooth, liquid mass. The main thing is to keep mixing it actively all the time. When this happens, add the butter to the cheese.

Cook the cheese with the butter until it comes to a boil. Then turn off the heat.

Pour the hot cheese into a suitable glass container and leave it to cool completely. It’s best to cover the surface with plastic wrap in contact so a crust doesn’t form. After cooling, place the cheese in the refrigerator. There it will thicken and fully stabilize. If you like, you can add chopped herbs, spices to taste, etc.
