Preparation
Step 1
To make delicious grandma-style potato pancakes, prepare the necessary ingredients and spices.
Step 2
Grate 1 kg (about 2.2 lb) peeled and rinsed potatoes into a deep bowl using a coarse grater.

Squeeze the potatoes to remove excess juice.
Step 4
Finely chop dill and celery greens to taste, then add them to the bowl with the grated potatoes.

Add 2 heaping tbsp flour to the bowl.
Step 6
Add khmeli-suneli, ground coriander, and salt to taste.
Step 7
Add 2 eggs to the bowl.
Step 8
Add 3 garlic cloves pressed through a garlic press.
Step 9
Cut 50 g (about 1.8 oz) salted pork fat into small pieces.
Step 10
Add the chopped pork fat to the bowl.
Step 11
Mix everything until uniform and let the batter rest briefly.
Step 12
Heat a skillet on the stove with vegetable oil, then spoon in the potato mixture, 1 heaping tbsp per pancake.
Step 13
Fry the pancakes until golden on both sides.
Step 14
Transfer the cooked pancakes to a plate lined with a napkin.
