Advice
For this recipe, it’s better to use fresh rather than frozen fish, otherwise the cooked fish may turn out dry.
Preparation
Step 1
If your fish is frozen, remove it from the freezer and let it thaw at room temperature. The dish will be juicier and tastier with freshly caught red fish.
Step 2
Gut the fish, remove scales, wash it thoroughly, pat dry, and cut into medium-sized pieces. If you plan to make broth from the head, remove the gills. Place the fish pieces in a suitable bowl.
Step 3
In a separate bowl, prepare the sauce. Add soy sauce and honey. Sprinkle in garlic powder, ground ginger, and your choice of dry spices (e.g., oregano).
Step 4
Mix everything until smooth.
Step 5
Pour the sauce over the fish. Stir well and let marinate for 30-40 minutes at room temperature.
Step 6
For convenience, you can marinate the fish in a plastic bag. Tie it tightly and leave it to rest. If possible, let it marinate longer in the refrigerator (lower shelf).
Step 7
Light the grill. Once the fire burns down and coals remain, place the fish pieces on an oiled grill grate. Grill, turning occasionally, until cooked through. Cooking time depends on the heat and size of the pieces.
Step 8
The grilled red fish is ready. It’s incredibly delicious both hot and cold!
