Grilled Potato and Pork Fat Skewers

Preparation
Step 1
How do you cook potatoes with pork fat on a grill? Prepare all the necessary ingredients. Try to choose potatoes of about the same size, so they cook evenly, and the finished skewers will also look more appetizing and attractive. Scrub the potatoes thoroughly with a brush to remove all dirt. Then rinse the potatoes under clean running water and dry them with paper towels.

Cut the potatoes into rounds about 1 centimeter thick, about 3/8 inch.

What kind of pork fat is best to use? That depends entirely on your taste. You can use any kind at all: salted, smoked, with layers of meat or without them, and so on. The skin can also be removed or left on, depending on your preference. I used lightly smoked pork fat without meat layers and I left the skin on, since it became crispy during grilling. So, cut the pork fat into slices thinner than the potatoes, about 0.5 cm, about 1/4 inch.

Prepare the marinade. Pour the vegetable oil into a small bowl. Peel the garlic, press it through a garlic press, and add it to the oil.

Add salt to taste. I used about 1/2 teaspoon of fine salt. Add allspice or ground red pepper.

You can also add your favorite spices and seasonings to the marinade. I added a little frozen herbes de Provence. Mix everything well.
Step 7
Next, marinate the potatoes. You can do this either in a deep bowl or in a plastic bag. I find it more convenient to marinate them in a bag, because the marinade spreads evenly over all the potato slices with very little effort. Put the potatoes into the bag, spread the marinade over them with a teaspoon, tie the bag, and mix everything inside. Leave about 1 teaspoon of the marinade for later use. Marinate the slices for about 5 minutes.
Step 8
Next, thread the potatoes and pork fat onto the skewers. Make sure the first and last pieces on each skewer are pork fat, so the potatoes on the ends absorb the fat during grilling and do not dry out. Alternate potatoes and pork fat until the skewer is full.
Step 9
Light the grill. When the wood has burned down and only hot coals remain, you can begin grilling the potato skewers.
Step 10
Place the skewers on the grill and cook them for about 30-40 minutes. The cooking time depends on many factors: how hot your coals are, what variety of potato you are using, and how often you turn the skewers.
Step 11
Grill the skewers until the potatoes are cooked through. As soon as an appetizing golden crust appears, check for doneness. You can do this with a toothpick - it should pierce the potatoes easily. My potato skewers took 30 minutes to cook.
Step 12
Brush the finished potatoes with pork fat using the remaining aromatic marinade and a silicone brush.

Finally, sprinkle the skewers with chopped herbs. They are ready to serve.
