Preparation
Step 1
The steak cooked by this recipe is the simplest option - no fuss and no complicated steps. Even someone who has never grilled meat over coals can handle it.
Step 2
The recipe is as follows: pour all the spices into a bowl and mix them together; rub the meat with the mixture and leave it in the refrigerator to marinate for at least 12 hours.
Step 3
The heat from the coals should be above medium - enough to sear (seal) the meat on both sides. Only then will the steak be juicy.
Step 4
Cooking time is strictly individual. For those who like full doneness (well done), it’s recommended to grill without flipping for 9 minutes per side. If you prefer less doneness, grill for less time. The distance from the barbecue grate to the coals also affects speed; in my case it was 10 cm (about 4 in). If you see the meat drying out, you can brush it with the same marinade it was marinated in.
Step 5
Tips: you can adjust the marinade to your taste. For example, rosemary can be replaced with basil, and sunflower oil can be replaced with olive oil. You can also “play” with the pepper - if you like it hot, add cayenne pepper. The coals should either be bought ready-made or made only from fruitwood; never use conifer wood, because burning resin produces black soot that will darken the meat and give it an unpleasant look and bitter taste. Once you place the steak down to grill on one side, don’t move it - only then will you get the beautiful grill-mark pattern everyone aims for.
