Grilled Mushrooms over an Open Fire

Preparation
Step 1
Choose medium-sized mushrooms. You can use white or brown champignons.
Step 2
Wash and dry each mushroom with paper towels. Mushrooms must be completely dry. Trim the ends of the stems if they are loose.
Step 3
Place mushrooms in a deep bowl suitable for marinating. Add your favorite spices - garlic powder, ground peppers, smoked paprika, and dried herbs work well. I used about 1/2 teaspoon of each. Season with salt to taste.
Step 4
Add sour cream and gently mix, coating each mushroom without breaking caps or stems.
Step 5
For easier marination, mix sour cream and spices in a separate bowl before adding to mushrooms. Cover and refrigerate for at least 1 hour. The longer they marinate, the more flavorful they become. I left mine overnight.
Step 6
Skewer the marinated mushrooms onto sticks.
Step 7
Light the grill. Once the coals are hot and glowing, place the skewers on the grill.
Step 8
Cook, turning occasionally, until mushrooms are done. They cook very quickly - about 5-7 minutes.
Step 9
Serve the mushrooms on a plate, garnished with fresh herbs.

Enjoy as a standalone dish or as a side for barbecue.
