Gravy with Onion, Carrot, and Tomato Paste

Preparation
Step 1
The proportions are approximate - you can increase or decrease quantities to taste.
Step 2
Peel the onion and rinse in cold water. Finely chop the onion. Preheat a frying pan, add a bit of vegetable oil, and sauté the onion for about 1 minute until soft and slightly translucent.
Step 3
Peel and rinse the carrot. Grate it using a coarse grater. Add the grated carrot to the pan with the onion, stir, and fry for another 2–3 minutes.
Step 4
Meanwhile, finely chop the bell pepper.
Step 5
Add the chopped bell pepper to the pan with the onion and carrot. Stir well.
Step 6
Separately, mix the flour with cold water until smooth (no lumps), then stir in the tomato paste.
Step 7
Pour the sauce mixture over the vegetables in the pan. Add salt and spices to taste. I usually add a bit of ground black pepper and dried herbs.
Step 8
Adjust the amount of water based on how much sauce you want. Bring everything to a boil. Cover with a lid and simmer for 5–7 minutes, then remove from heat.
Step 9
The gravy with onion, carrot, and tomato paste is ready! Serve with any side dish or meat. Enjoy!
