Step 1
Prepare the ingredients for the dough. Use high-quality butter and remove it from the refrigerator beforehand to soften. The cream can be of any fat content.

Make the dough. In a large bowl, sift the flour - this removes impurities and enriches it with oxygen, making the dough lighter and fluffier.

Add baking powder and mix well. Add the eggs (washed and dried), then butter, sugar, and cream.

Knead the dough first with a spoon, then with your hands. It will quickly stop being sticky and form a smooth ball.

Divide the dough into two parts, wrap each in plastic wrap or a bag, and place in the freezer for 30 minutes - it should harden so you can grate it easily.

While the dough chills, prepare the filling. Use good-quality cottage cheese, any fat content, and cream.

To make the filling: combine cottage cheese, cream, and sugar in a bowl. Add vanilla if you wish.

Blend with an immersion blender until smooth and creamy. If you don’t have a blender, press the cottage cheese through a sieve before adding other ingredients - this step ensures a smooth, delicate texture.

Prepare a baking pan (any shape or material). Line the bottom with parchment paper - it makes it easier to remove the pie later. Take one part of the dough from the freezer and grate it directly into the pan (use a coarse grater).

Spread the grated dough evenly over the bottom, but don’t press it down too much - the pie should have a crumbly texture.

Spread the cottage cheese filling on top and smooth it with a spoon. Optionally, add raisins, chopped chocolate, berries, or jam.

Grate the second part of the dough (it’s easier to do this on a cutting board) and layer it on top of the filling to form the upper crust.

Bake in a preheated oven at 350°F (180°C) for 30-40 minutes, until the top turns golden brown. Remove and let cool completely before cutting.
