Gluten-Free Syrniki Without Flour or Semolina
Quick, simple, tasty, and, most importantly, more wholesome. I would like to share curd cheese syrniki without flour or semolina, meaning gluten-free. Their taste is almost no different from the usual syrniki made with flour or semolina.

Preparation
Step 1
Prepare the ingredients you will need. Let’s begin: everything is quick and simple. I pressed the curd cheese through a sieve. Mine was 5% fat. It is better not to use curd cheese that is too fatty, as it may release liquid while frying. I rinsed and dried the raisins. I always use only corn starch. The egg yolks can be replaced with a whole egg, but I think the mixture is more stable this way. Sugar can be added to taste.
Step 2
Mix everything together and stir well. Add the raisins at the very end. The curd cheese mixture is ready. Let it stand for about 10 minutes.

Before shaping and during shaping, be sure to grease your hands with vegetable oil, because the mixture is quite sticky. It is also better to sprinkle the surface where you will place the syrniki with starch.

From this amount of curd cheese, I got 7 medium syrniki.

You can also sprinkle the tops with starch, but this is optional. In total, I used 10 g / about 1/3 oz of starch for coating and dusting the syrniki. If your hands are always well greased with oil, you may need even less starch.

Shape the syrniki into thick rounds.

Fry them in vegetable oil over medium heat on each side until golden brown.

It is very convenient to flip them with a silicone spatula. The syrniki hold their shape well and do not release liquid while frying.

That’s it, the syrniki are ready.

You can serve them with sour cream, condensed milk, jam, preserves, or fresh berries - whatever you like.

If desired, sprinkle with powdered sugar. They turn out tender, fragrant, moderately sweet, and hold their shape well. They are tasty both warm and cold. Enjoy!
