Garlic Pasta

Step 1
Any pasta shape works – I used spaghetti. Just make sure it’s made from durum wheat for the best texture and nutrition. Instead of tomato paste, you can use fresh tomatoes, passata, or canned tomatoes. Adjust the amount of garlic and spices to your taste.

Peel and mince the garlic however you prefer. I chopped it finely with a knife, but you can slice or press it too.
Step 3
At the same time, bring a pot of water to a boil for the pasta and heat a pan for the sauce. Pour oil into the pan and warm it up slightly. Add the garlic and sauté for a couple of minutes on low heat, just enough to infuse the oil with flavor. Don’t let it burn.

Add the tomato paste to the garlic oil. Fry it lightly, then add about 1/2 cup (100 ml) of water. Stir until smooth. Add spices, paprika, sugar, and a pinch of salt. Stir again and let the sauce simmer over very low heat.
Step 5
Once the water boils, salt it and cook the pasta over medium heat. Cook according to package instructions until al dente. Meanwhile, the sauce will reduce to the right consistency.
Step 6
Transfer the cooked pasta directly to the sauce pan. I skip using a colander so a bit of starchy pasta water mixes into the sauce for extra juiciness. Stir and let everything blend together over low heat for 1–2 minutes.
Step 7
Serve the garlic pasta hot, topped with grated cheese. Enjoy your meal!
