Fried Mushrooms with Eggs

Step 1
You can adjust the proportions of all ingredients to your taste. Any type of mushrooms can be used for frying - boiled forest mushrooms or, as in this recipe, fresh champignons.
Step 2
Keep in mind that champignons shrink a lot during frying. If you want larger slices, choose medium-sized mushrooms. Rinse thoroughly under running water to remove dirt, cut away any damaged parts, then pat dry with a paper towel. Slice into pieces or cut into 2-4 chunks.
Step 3
Pour some vegetable oil into a skillet and heat over medium heat. Carefully place the mushrooms in (the oil may splatter). Fry for about 3-5 minutes on low heat, stirring occasionally to avoid burning.
Step 4
Wash the eggs. Push the fried mushrooms aside in the pan and crack the eggs into the empty spots. Try to keep the yolks intact. Cook together for another 4-5 minutes over low heat. Add a little salt and your favorite spices. You may cover the skillet with a lid for faster cooking, but the yolks will set harder this way. With the lid open, yolks stay runny.
Step 5
Delicious and filling scrambled eggs with mushrooms are ready. Transfer to plates and serve hot. Enjoy!
