Fried Meat with Mushrooms in a Skillet

Instead of fresh mushrooms, you can use frozen or dried ones (you’ll need 5-6 times less dried). Frozen mushrooms can be thawed however is convenient (e.g., microwave) and drained. Or, if liquid isn’t crucial, use without thawing. Dried mushrooms should be well washed, since they aren't cleaned before drying, and soaked in cold water for at least 2–3 hours.

Step 1
Besides pork, you can use any other meat. Keep in mind the cooking time, taste, and calories will vary. For example, beef takes longer to cook than pork, while chicken or turkey cooks faster. I’ll use pork neck, which has a bit of fat and stays juicy.
Step 2
Rinse the chosen meat under running water and pat dry with paper towels to remove moisture. This helps sear the meat instead of steaming. Cut the meat into strips.
Step 3
Peel and rinse the onion, then finely chop it. Heat a skillet and add a bit of vegetable oil. Sauté the onion for a couple of minutes until translucent.
Step 4
Add the meat to the skillet with the onion. Stir and fry together for 5-7 minutes over high heat until the meat starts to change color. Adjust heat if needed to avoid burning.
Step 5
Choose fresh mushrooms, ideally medium-sized, white, and firm without spots or spoilage. Rinse under warm or cold water, cut away any damaged parts, and slice. Large mushrooms can be cut into multiple parts; small ones in half.
Step 6
Add mushrooms to the skillet. Fry for another 5 minutes. The mushrooms will shrink and release some juice. Add salt and spices to taste - ground black pepper works well.
Step 7
Toward the end, add fresh herbs and pressed garlic. I use parsley, but you can use cilantro, dill, or green onions. Stir and heat for a couple more minutes.
Step 8
Fried meat with mushrooms is ready! Serve hot with potatoes or rice as a side. Enjoy your meal!
