French-style Pork with Mushrooms and Tomatoes

Choose tomatoes that are juicy but firm. Soft tomatoes don’t hold their shape well, and during slicing and cooking, they’ll turn into a shapeless mass and spoil the dish’s appearance.
Preparation
Step 1
Choose boneless pork. An ideal option is pork loin (karbonat). Cut it into serving slices about 0.6–0.8 inches (1.5–2 cm) thick.
Step 2
Peel the onion and rinse under cold water. Finely chop the peeled onion. Heat a skillet until hot, add a little vegetable oil, then add the chopped onion and sauté for about a minute until translucent.
Step 3
Rinse the mushrooms under running water and pat dry with paper towels. Finely chop the mushrooms.
Step 4
Add the chopped mushrooms to the skillet with the onion. Stir. Fry everything together for 3–5 minutes until the moisture evaporates. During cooking, the mushrooms will shrink a bit in size. Sprinkle them lightly with salt and spices, such as ground black pepper.
Step 5
Lightly pound the meat slices with a kitchen mallet. You can use any ovenproof baking dish. Grease the bottom and sides of the dish with vegetable oil and place the pounded meat slices inside.
Step 6
Spread mayonnaise on each meat slice. For extra aroma, you can add garlic. Then place the sautéed mushrooms on top.
Step 7
Slice the tomatoes into rounds and lay them over the mushrooms. Sprinkle grated cheese on top. Place the baking dish into an oven preheated to 350°F (180°C) and bake for 40–50 minutes.
Step 8
During baking, the meat will release juices, which will mostly evaporate. The cheese will melt and start to brown slightly. Arrange the cooked meat on a plate and serve. Enjoy your meal!
