Fluffy Pilaf in a Multicooker

A flawless, aromatic, and rich dish – no fuss! Fluffy pilaf in a multicooker is much easier and quicker to prepare than on the stovetop. It doesn’t need supervision, won’t burn, and the rice turns out fluffy. You can use any meat.

Preparation
Step 1
You can use any meat — beef, chicken, lamb, I used pork. Long-grain rice is best as it stays whole and gives you a fluffy pilaf. Avoid parboiled rice as it remains too firm. Choose spices you like, preferably with cumin (zira).
Step 2
Wash the meat and pat it dry well. Cut it into small pieces.
Step 3
Peel and slice the onion into thin half-rings.
Step 4
Peel and cut the carrot into thin matchsticks.
Step 5
Set your multicooker to a frying mode. This mode might be called “Fry,” or in my case, “Bake.” Set the timer to 40 minutes. Preheat the pot, pour in cooking oil, and add the chopped meat. Fry with the lid open until the color changes.
Step 6
Once the meat turns gray, add the onion and mix. Fry for about 5 minutes. Then add the carrots and continue frying for another 5 minutes. Add salt and pepper. Cover the multicooker (don’t snap it shut) and finish cooking until the program ends.
Step 7
Rinse the rice in several changes of water until it runs clear. Spread the rice on top of the meat evenly. Do not mix — pilaf is cooked in layers. Salt the rice and add spices. I used a pilaf spice mix, a bit of turmeric for color, and barberries.
Step 8
Peel the outer layer from a garlic bulb, rinse it, and press it into the center of the rice. Pour hot water into the bowl so it’s 0.6 inches (1.5 cm) above the rice. Hot water helps reduce cooking time.
Step 9
Close the lid and choose the pilaf program (mine is literally called “Pilaf,” others may say “Grain” or “Rice”). If needed, set the timer to 45 minutes. Cook until the program finishes. All the water should absorb into the rice. Adjust based on your multicooker’s settings.
Step 10
Remove the garlic bulb and now mix the rice and meat. Close the lid again and let it rest for 10 minutes. Then serve your fluffy pork pilaf.
