Step 1
How do you cook fluffy millet porridge with water in a pot? Prepare all the necessary ingredients. The most important thing when making porridge is good-quality groats, and I do not recommend saving on them. Choose groats from a reliable producer and do not chase the cheapest option. Good groats are clean, without foreign impurities, and free from insect larvae. Use natural butter without milk fat substitutes, with at least 82% fat.
Step 2
Sort through the groats, removing any debris and damaged grains. Then rinse them well until the water runs completely clear. It is best to use a large sieve for this.
Step 3
For cooking the porridge, use a pot with a thick bottom so the porridge does not burn. Put the groats into the pot.

Pour in the water. You may need a little more or a little less, depending on the size of the pot you choose. The water level should be 1–1.5 cm above the level of the millet. Millet takes quite a long time to cook, and to speed up the process, you can soak it beforehand, but this advice is useful only if you soak it overnight and cook it in the morning. Otherwise, you will spend soaking it the same time you would have spent cooking it.
Step 5
Salt the water. Millet, like rice, absorbs a lot of salt, so do not be too sparing. Bring the millet to a boil over low heat, then reduce the heat and cook it, covered, for about 1 hour. The heat should be very low so each grain has time to absorb the water. If necessary, you can add a little more water, about 50 ml, about 3 tablespoons.
Step 6
When all the liquid has evaporated, add the butter to the porridge, wait until it melts, and stir. For a meat-free version of the dish, you can replace the butter with any vegetable oil. You can let the porridge rest a little by keeping it in a warm place. In my childhood, my grandmother wrapped the pot of porridge in a warm blanket.
