Fish with Tomatoes and Cheese

Tender fish baked under juicy tomatoes, sweet peppers, and a melting cheese crust. A bright and flavorful dish for any day!

How to properly fillet a whole fish? Remove the tail, head, and fins. Cut along the spine down to the backbone. Turn the fish on its side. Using a sharp knife, slice the meat off the backbone. Turn the fish over and fillet the other side. Clean the inside, removing the black membrane because it’s bitter and will ruin the taste. Rinse and be sure to pat it completely dry.
Preparation
Step 1
Any fillet of white or red fish is suitable for this recipe. You can use fresh or frozen fish. If using frozen fish, thaw it in advance by moving it from the freezer to the lower shelf of the refrigerator.
Step 2
Rinse and pat dry the fish fillet. I’m using ready-made pollock fillets. Instead of fillets, you can use a whole fish, which should first be cleaned and cut into serving pieces.
Step 3
Peel the onion and cut it into rings.
Step 4
Slice the tomatoes into wedges or rounds. If you have cherry tomatoes, cut them in half. Choose tomatoes that are juicy yet firm. Soft tomatoes lose their shape during slicing and cooking, turning into a shapeless mass and spoiling the dish’s appearance. To make the dish bright and pretty, I use vegetables of various colors.
Step 5
Remove seeds from the bell pepper and slice it into rings. You can replace or supplement the vegetable part to your taste.
Step 6
Grate the cheese on a coarse grater. I like grating cheese on a Korean carrot grater - it makes a lovely lacy mesh when baked. I’m using regular cheese, but any cheese you like will work.
Step 7
In a small bowl, mix mayonnaise, onion, fish seasoning, salt, and pepper.
Step 8
Put the fish into the mayonnaise mixture and refrigerate for 20 minutes to marinate.
Step 9
Place the marinated fish into a baking dish greased with vegetable oil. Lay most of the onion rings on the bottom of the dish, then spread the fish on top. This prevents the fillet from burning or drying out during baking.
Step 10
Next, layer the bell pepper, tomatoes, and grated cheese. Bake in a preheated oven at 200°C (about 390°F) for 25-30 minutes or longer until the fish is cooked through.

Arrange the baked fish with tomatoes and cheese on plates, garnish with fresh herbs, and serve. Enjoy your meal!
