Fish in Cream Sauce in a Pan

Tender, delicious, perfect for dinner or a festive table! Braised fish in cream sauce turns out juicy, lightly seared, and wonderfully aromatic. It’s a simple and quick dish that even a beginner cook can make.

Preparation
Step 1
You can use any red fish - salmon, trout, pink salmon, coho, etc. I’m using trout fillet. This recipe also works for steaks or fish pieces. Use vegetable or fish broth, or simply water. Cream should be 10-20% fat.
Step 2
Heat vegetable oil in a non-stick pan over medium heat. Place the fish pieces in the pan. Fry on one side until lightly golden (about 5 minutes), then flip to the other side. Don’t overcook the fish, especially if the pieces are thin - reduce frying time if needed.
Step 3
While the fish cooks, prepare the other ingredients. Peel the garlic and cut it into small cubes.
Step 4
Rinse and pat dry the spinach. Chop it into small pieces.
Step 5
Grate the cheese on a medium grater so it melts quickly. Any cheese works - hard, semi-hard, or soft like mozzarella. The important thing is that it’s tasty, high quality, without vegetable fat substitutes, and melts well.
Step 6
Remove the fried fish from the pan. Wipe off the oil. Pour a bit of fresh vegetable oil into the pan, then add a cube of butter (adding vegetable oil prevents the butter from burning). Add the garlic to the oil and sauté lightly until fragrant. Sprinkle in the flour and stir quickly so it absorbs all the oil.
Step 7
Gradually pour in the hot broth or water, stirring constantly with a spatula to prevent lumps. Simmer briefly until the mixture thickens.
Step 8
Pour in the cream, stirring continuously. Add spices suitable for fish; I’m using lemon pepper.
Step 9
Add the grated cheese into the pan and stir. Simmer the sauce over low heat until the cheese melts.
Step 10
Add the spinach, mix well, and simmer until the sauce reaches the desired thickness. If it becomes too thick, dilute it with a little water. Taste the sauce and add more salt if needed.
Step 11
Place the fried fish pieces back into the sauce. Let them simmer for another couple of minutes, then turn off the heat.
Step 12
Serve the braised fish drizzled with the sauce. Boiled potatoes, pasta, or rice make excellent side dishes. Enjoy your meal!
