Easter Kulich with Dried Apricots, Zest, and Cottage Cheese

Aromatic, bright, and very tasty, stays soft! I bake Easter Kulich with dried apricots, zest, and cottage cheese every year - it’s a family tradition. Always delicious and unique!

Step 1
How to make Easter Kulich with dried apricots, zest, and cottage cheese? Prepare the ingredients for the dough.
Step 2
Prepare the starter: add dry yeast and 1 tsp sugar to warm milk (not above 104°F / 40°C). Add 1 tbsp flour and mix until yeast dissolves.
Step 3
Leave in a warm place for 30 minutes.
Step 4
Separate 1 egg white for the glaze. Beat eggs with sugar, vanilla, and a pinch of salt.
Step 5
Melt butter in a water bath or microwave.
Step 6
Combine melted butter and beaten eggs.
Step 7
The starter should rise by now.
Step 8
Mix cottage cheese, the starter, and egg mixture thoroughly.
Step 9
Gradually add flour.
Step 10
Knead the dough well.
Step 11
The dough should be soft and sticky.
Step 12
Leave in a warm place for 1 hour, avoiding drafts. (You can put it in a slightly warmed oven at 86°F / 30°C.)

Prepare dried apricots - wash them.

Finely chop or blend them.

After 1 hour, the dough has risen well.

Add dried apricots and tangerine zest.

Knead again.

Leave in a warm place for 30 minutes.

Divide dough into greased molds (I used a silicone mold with a decorative pattern).

I made 4 kulich. You can use round tin cans or large metal mugs. If not silicone, line the bottom and sides with parchment. Leave to rise 20-30 minutes.

Preheat oven slightly and put risen kulich for 10 minutes on low heat, then close oven, increase to 356°F / 180°C, bake 35-45 minutes, depending on mold size.

For the glaze: take the reserved egg white, powdered sugar, confectioner’s sprinkles, and lemon juice.

Beat egg white with powdered sugar and add lemon juice.

You’ll get a shiny, bright white, thick glaze.

After 40 minutes, the kulich is baked; check with a wooden skewer.

Cover with a towel and let cool.

Carefully remove from molds.

Spread glaze on top.

Decorate with sprinkles.

The result is beautiful with a magical aroma - unfortunately, it can’t be transmitted! The next day, the glaze sets.
