Dried Mushroom Spread

Preparation
Step 1
Prepare all the necessary ingredients for making dried mushroom spread. It is best to use dried forest mushrooms that were gathered in the forest and dried at home, rather than store-bought ones. The spread will be more aromatic with such mushrooms. For spices, you can use, for example, Provençal herbs, but do not overpower the mushroom spread with strong, sharp seasonings. The flavor of the mushrooms themselves should be the main taste.

Rinse the dried mushrooms under running water to remove all the sand, then cover the rinsed mushrooms with clean water. Leave the mushrooms to soak for at least a couple of hours.
Step 3
After the specified time, drain the water from the mushrooms, fill the pot with fresh clean water, and place it over heat. Cook the mushrooms in a small amount of water over medium heat for about 1 hour. Then drain the broth into a separate container. It will not be needed for the spread, but you can use it to make an aromatic sauce or a small soup.
Step 4
Peel the onion, rinse it under water, and cut it into large half rings. Transfer it to a pan, add a little salt, and lightly fry in vegetable oil until translucent. At the end of cooking, add the spices and mix.
Step 5
Transfer the boiled mushrooms and fried onion, together with the vegetable oil it was fried in, to a blender and blend until smooth. If you do not have a blender, you can pass the onion and mushroom mixture through a meat grinder, preferably using a plate with smaller, more frequent holes.
Step 6
The dried mushroom spread is ready. If needed, add more salt to taste, let it cool, then transfer it to a serving bowl or another small container and serve.
