Deep-Fried Cottage Cheese Balls
Fluffy, golden and crisp on the outside, these cottage cheese balls are a simple grandma-style treat made from everyday ingredients. Inside, they stay soft and tender.

Step 1
Prepare the ingredients. Use cottage cheese with any fat content, but avoid a very grainy variety; soft cottage cheese works best for the dough. The amount of flour is approximate, so adjust it according to the consistency of the dough.
Step 2
Place the cottage cheese in a bowl and add the sugar and salt, adjusting both to taste. Mash everything together with a fork. If the cottage cheese is grainy, blend it until smooth or press it through a sieve first.
Step 3
Add the eggs to the cottage cheese mixture and stir with a fork until evenly combined.
Step 4
Sift the flour and mix it with the baking soda. Gradually add the flour to the cottage cheese and egg mixture, stirring with a fork after each addition. Once the dough becomes too thick to stir, begin kneading it by hand. Stop adding flour when the dough is soft and only barely sticky.
Step 5
Roll the dough into balls about the size of a walnut or slightly smaller. Lightly dust your hands with flour if the dough sticks. The original recipe makes approximately 30 balls.
Step 6
Choose a deep, preferably narrow saucepan with a heavy bottom and pour in enough frying oil for deep-frying. Heat the oil well. To check whether it is ready, dip the end of a wooden spoon or skewer into the oil; small bubbles should form around it.
Step 7
Carefully lower several balls into the hot oil, leaving plenty of room because they expand as they cook. Reduce the heat to medium and fry until golden, gently turning them so they brown evenly on all sides.
Step 8
Remove the cooked cottage cheese balls with a slotted spoon and transfer them to a plate lined with paper towels to absorb excess oil. Fry the remaining balls in the same way.
Step 9
Serve the deep-fried cottage cheese balls sprinkled with powdered sugar. They are especially good while still warm.
