Curd Pour-over Pie in the Oven

Step 1
Prepare the ingredients. Start with the batter. Sour cream of any fat content will work. You may reduce the amount of sugar, since the dough turns out quite sweet.

How to make the batter? Crack the eggs into a bowl. Add sugar and a pinch of salt (it will act as a flavor enhancer). Beat with a mixer at high speed until fluffy and pale.

Add sour cream to the beaten eggs. Mix it in with the mixer until fully combined.
Step 4
Add baking powder to the flour and stir. This distributes it evenly so the batter rises uniformly. Sift the flour with the baking powder into the wet mixture. This removes any debris and adds oxygen, making the pie more airy.

Mix the batter until smooth. You can use a spatula or a mixer. The batter should be quite liquid - that’s normal.

Now prepare the filling. Any curd (cottage cheese) will do, as long as it’s tasty and natural. I used grainy curd - that’s fine, since the filling will be blended.

How to make the filling? Place the curd in a deep bowl. Add sugar, starch, vanilla, and one egg. For flavor, add lemon zest - I grated half a lemon directly into the bowl.

Blend the filling with an immersion blender until smooth. If you don’t have one, press the curd through a sieve and mix everything together.

Take a baking form. I used a springform pan, 20 cm (8 in) in diameter. Grease it lightly with vegetable oil. Line the bottom with parchment paper. Pour in half of the batter and smooth it with a spatula.

Spread the curd filling evenly on top.

Pour the remaining batter over the filling and spread it out.

Place the pie into a preheated oven at 180°C (350°F). Bake for 30-35 minutes, until golden and risen. Check doneness with a wooden skewer - it should come out dry from the center. Remove the pie from the oven and cool completely. Then release from the pan.
