Curd and Plum Pie from Yeast Dough

Preparation
Step 1
Prepare all the necessary ingredients for homemade baking with curd and plum filling.
Step 2
For the starter, take a deep bowl, pour in 150 ml (2/3 cup) of room-temperature milk, add 1 tbsp sugar and 10 g (0.35 oz) fresh pressed yeast.
Step 3
Add 1 heaping tbsp of wheat flour, mix well, and leave for 15-20 minutes in a warm place to activate the yeast.
Step 4
Separate 1 egg into white and yolk. Add the egg white to 250 g (9 oz) of curd in a large bowl.
Step 5
Place part of the yolk into a small bowl with 2 tbsp warm milk (for brushing the pie later), and the rest into the starter.
Step 6
Mix all ingredients. Sift in 250 g (2 cups) of flour, add ½ tsp baking powder, a pinch of salt, and knead into dough.
Step 7
Add 20 g (1½ tbsp) softened butter and knead by hand for about 10 minutes until smooth.
Step 8
Shape into a ball, coat with 1 tbsp vegetable oil, and leave covered for 50 minutes in a warm place.
Step 9
For the filling, mix curd with 2 tbsp sugar, 1 tsp vanilla sugar, and 2 tbsp sour cream.

Blend until thick and smooth.
Step 11
Lightly flour the table, place risen dough, knead to release gas.
Step 12
Shape into a ball, cover with a bowl, and rest for 20 minutes.

Roll the dough into a thin round, transfer onto parchment paper.

Using a pot lid, press lightly in the center to mark a circle.
Step 15
Cut strips (1 cm wide) from the marked circle outward, twist them inward, and pinch pairs of strips together.

Twist and connect strips all around, then transfer parchment with the shaped dough onto a baking sheet. Let rest 15 minutes, then prick the center with a fork.

Spread 2 tbsp plum jam in the center, then evenly top with curd filling.
Step 18
Mix 2 tbsp warm milk with egg yolk and brush the pie edges. Bake at 175°C (350°F) for 15-17 minutes.

Remove from oven, transfer to a plate. A fragrant yeast pie with curd and plum filling is ready. Enjoy!
