Cucumber, Tomato, and Bell Pepper Salad

Preparation
Step 1
Using seasonal vegetables from your garden will make the salad tastier and more aromatic. You can use olive, vegetable, or rapeseed oil. Adjust the quantity of each ingredient to your taste. Rinse all vegetables and herbs under cold water and dry with paper towels.
Step 2
If the cucumber has a tough skin, peel it. Cut the cucumber into medium-sized cubes. Any cutting style works, but uniform pieces, like cubes or slices, make the salad look neat. Place the cucumber in a deep salad bowl.
Step 3
Cut the bell peppers in half, remove the core, seeds, and white membranes. For this salad, I used four small peppers of different colors. Dice the peppers and add them to the cucumber.
Step 4
Remove the stem ends of the tomatoes. Cut each tomato in half, then dice it. Add the tomatoes to the cucumber and peppers.
Step 5
Prepare a flavorful dressing. In a small deep bowl, pour olive oil and add a pinch of your favorite dried spices. I used 0.25 tsp dried thyme, garlic powder, a ready-made vegetable salad spice mix, and ground pepper blend. Mix thoroughly.
Step 6
Peel and dice an onion. Red onion or shallot adds extra color and appeal. Add the onion and olives to the salad bowl, then pour over the aromatic dressing.
Step 7
Chop herbs and add to the salad. Salt to taste and mix.
Step 8
If you have fresh green lettuce leaves, add them to the vegetables.
Step 9
Mix everything thoroughly. The salad is ready!

Chill the salad in the fridge for 5-10 minutes before serving if desired. Serve and enjoy!
