Preparation
Step 1
Prepare the ingredients. Use soft, not too moist cottage cheese for the filling. For a smooth texture, strain it through a sieve or blend with an immersion blender.

Grate the cold butter using a coarse grater, then mix it with sugar and flour. Rub everything together with your hands until a crumbly, sandy texture forms.

Prepare a 20 cm (8-inch) springform pan. Line the bottom with parchment paper and attach the sides. Spread half of the crumb mixture evenly over the bottom, pressing it down to create a firm base.

Prepare the cottage cheese filling. In a deep bowl, combine the cottage cheese, sugar, and eggs. Add a pinch of vanilla for flavor. If your cottage cheese is too moist, mix in 1-2 tablespoons of starch. Blend everything until smooth.

The filling should have a moderately liquid consistency.

Pour the cottage cheese filling into the prepared crust in the baking pan.

Sprinkle the remaining crumb mixture evenly over the top. Bake in a preheated oven at 180°C (350°F) for 45-50 minutes. Baking time may vary depending on your oven, so keep an eye on it.

The cake will turn golden brown. During baking, the center may slightly jiggle, but it will firm up once fully baked.
