Country-Style Grain Soup
Thick, filling, tasty, budget-friendly, and easy to make! Country-style grain soup can be cooked in any broth or in water, so it can be meatless. It warms and satisfies. Serve with fresh herbs, adding sour cream or mayonnaise.

Step 1
How do you cook country-style soup? Prepare the ingredients. It’s best to use a chicken meant for soup - it makes a tastier broth. A regular broiler works too. I cooked the soup with millet. Rice, pearl barley, or barley groats also work - just remember each grain has a different cooking time. For herbs, use dill or parsley.
Step 2
Pour clean cold water into a pot. Add the chicken (it’s more convenient if you cut it into pieces). Put the pot over low heat. Bring to a boil and skim off the foam with a slotted spoon. Lower the heat to minimum. Simmer the chicken for 30 minutes; a soup chicken takes longer - about 1½-2 hours. Then remove the chicken and let it cool slightly.
Step 3
While the broth cooks, prep the other ingredients. Sort through the millet, removing debris and any reddish grains. Then rinse the grain well under cold running water.
Step 4
Cut the peeled potatoes into small pieces.
Step 5
Add the potatoes and millet to the broth. Add salt. Bring the soup to a boil and cook for 15 minutes.
Step 6
Finely chop the herbs.
Step 7
Remove the meat from the bones and cut it into small pieces.
Step 8
Add the meat to the soup and stir in the herbs. Cook for another 2-3 minutes. Country-style grain soup is ready.
