Choosing the right cottage cheese is crucial. A low-quality product can ruin the dish, as it directly affects the texture, taste, and final result. Always select fresh, natural cottage cheese without additives or spoilage signs (such as an unpleasant odor, uneven color, or separated whey). Pay attention to consistency (dry, moist, smooth, or grainy) and fat content.
Preparation
Step 1
Prepare the ingredients. Choose high-quality, natural cottage cheese, avoiding processed products with vegetable additives. The fat content is not essential – it only affects the calorie count. I used 5% fat cottage cheese. Take the butter out of the fridge in advance so it softens. Use dark, seedless raisins.
Step 2
Transfer the cottage cheese to a bowl and blend with an immersion blender until smooth and creamy. Even if the cottage cheese appears soft and uniform, do not skip this step – it will make the mixture lighter and fluffier. If you don’t have a blender, pass it through a fine-mesh sieve.
Step 3
Add the soft butter to the cottage cheese. It must be soft to mix easily. Add powdered sugar (adjust to taste). With 4 tablespoons, the mixture will be very sweet, so feel free to use less. Use powdered sugar, not granulated sugar, as sugar won’t dissolve properly. Add a pinch of vanilla.
Step 4
Beat everything with a hand mixer. If your cottage cheese is too dry and the mixture turns out too thick, add a little cream. Beat for about 5 minutes until light and fluffy.
Step 5
Prepare the raisins. How to steam raisins properly? Rinse them thoroughly, then pour boiling water over them and let sit for 5 minutes. Drain and pat dry with a paper towel. Add the raisins to the cottage cheese mixture and mix gently with a spatula.
Step 6
The mixture is now ready – it’s very soft and creamy. Store it in a sealed container in the refrigerator. After chilling, the cottage cheese with raisins will become thicker. Shelf life: up to 3 days.
