Cottage Cheese with Egg – 5-Minute Breakfast

Preparation
Step 1
Use cottage cheese with 5-9% fat content. The higher the fat, the tastier and more filling the dish. Most importantly, the cottage cheese should be fresh, mild, and soft.

Rinse and steam the raisins thoroughly. To steam properly, pour hot water over the washed raisins and let them sit for 10-15 minutes. Drain and pat dry with paper towels. You can also use other dried fruits (apricots, prunes) or dried berries (cranberries, cherries).
Step 3
In a bowl, combine cottage cheese, eggs, sugar, and flour. Always wash eggs before use, as even clean-looking shells can harbor harmful bacteria. Adjust sugar based on the sweetness of your dried fruit. You may also use heat-safe sugar substitutes.
Step 4
Mix the cottage cheese mixture until smooth.
Step 5
Add the dried raisins (or chopped dried fruit) to the mixture. Chop large pieces of dried fruit before adding.
Step 6
Pour a little water into a microwave-safe bowl to prevent sticking during cooking.

Spoon the cottage cheese mixture into the bowl and smooth the top.
Step 8
Microwave the cottage cheese and egg mix. I baked it at 750 watts for 3 minutes. Keep in mind that microwave ovens vary - cooking time and power settings may differ. Check your appliance manual and adjust accordingly.
Step 9
Once the casserole firms up, use oven mitts to remove the bowl from the microwave - it will be hot!
Step 10
Turn the bowl upside down onto a plate. You can serve this dish warm or cooled. Enjoy your meal!
