Cottage Cheese Sweet Buns with Cherry Filling and Vanilla

Preparation
Step 1
First, prepare all the necessary ingredients for making these wonderful sweet pastries in the oven.
Step 2
For the starter dough, pour 250 ml (1 cup) of room-temperature milk into a large bowl, then add 3 tablespoons of all-purpose flour.
Step 3
Add 2 tablespoons of sugar to the milk and flour mixture.
Step 4
Add 20 g (0.7 oz) of fresh yeast (or substitute with dry yeast if preferred).
Step 5
Mix all the ingredients well, then place the bowl in a warm spot for 15-20 minutes to activate the yeast.
Step 6
In another large bowl, add 150 g (5.3 oz) of cottage cheese, 2 tablespoons of sugar, 1 teaspoon of vanilla sugar, and a pinch of salt.
Step 7
Add 1 egg and 70 g (2.5 oz) of softened butter. Blend everything until smooth and creamy.
Step 8
After the yeast mixture has activated, pour it into the cottage cheese mixture and mix until fully combined.
Step 9
Sift 400 g (about 3¼ cups) of flour into the bowl, then add 1 tablespoon of baking powder.
Step 10
Mix all ingredients and start kneading the dough.
Step 11
Knead the dough by hand for about 10 minutes until it reaches a soft, elastic texture.

Place the dough in a bowl, lightly coat it with vegetable oil, cover with a kitchen towel, and let it rise in a warm place for 1 hour.

Once risen, place the dough on a table and knead it lightly.

Divide the dough into 12 portions, shape them into balls, cover with a towel, and let rest for 30 minutes.
Step 15
Using scissors, make four crosswise and four lengthwise cuts on each dough ball. Place them on a baking sheet lined with parchment paper.

Make a small indentation in the center of each bun and let them rise again for 20 minutes.
Step 17
Add a small spoon of cherry jam into each indentation, brush the tops with a beaten egg mixed with 2 tablespoons of milk, and sprinkle with sugar.

Bake the buns in a preheated oven at 175°C (about 350°F) for 15-20 minutes until golden brown.

Remove from the oven and let the cottage cheese buns cool slightly.
