Cottage Cheese Semolina Cake
Moist, juicy, absolutely not dry - made for cozy tea time! What happens if you combine two favorite recipes - a cake and a cottage cheese casserole? You get a wonderful cottage cheese semolina cake! It’s much more tender than the classic, usually slightly dry version, and more crumbly than a regular casserole. Either way, it’s worth trying!

Step 1
How to bake semolina cake with cottage cheese? Prepare the ingredients. The fat content of the cottage cheese and sour cream doesn’t matter much - just keep in mind it will change the calorie count. Adjust the amount of sugar to your taste.
Step 2
Separate the eggs into yolks and whites. Do this as carefully as possible: the whites must be perfectly clean - even a drop of yolk will prevent them from whipping well.
Step 3
Take the bowl with the yolks and add cottage cheese, sugar, sour cream, and vanilla sugar.
Step 4
Mix the ingredients. I blended them with an immersion blender until the mixture became completely smooth and tender. But mixing with a spoon also works well. The only thing is: in that case, I’d recommend rubbing the cottage cheese through a sieve to remove any grains.
Step 5
Mix the semolina with the baking powder. Add it to the cottage cheese mixture. Stir until smooth.
Step 6
Whip the egg whites with a mixer to stiff peaks. This will take about 5 minutes; the whites should become very thick. This is important because, along with the baking powder, they will make the batter rise during baking.
Step 7
Add the whipped whites to the batter and fold them in very gently. Be careful so the air bubbles formed during whipping don’t burst - they will lift the batter. The finished batter will be very delicate and runny.
Step 8
Take a baking pan. You can bake in any pan, regardless of shape or material. Mine is silicone, so nothing needs to be done. For pans made of other materials, grease with a small amount of vegetable oil.
Step 9
Bake in the oven at 180°C (356°F) for 45-55 minutes, until golden.
