Preparation
Step 1
Choose soft, not too wet cottage cheese. The less moisture, the less flour will be needed. Adjust sugar to taste.

Place the prepared cottage cheese in a deep bowl. To make it smooth, you can press it through a sieve or blend with a hand blender. I simply mashed the largest curd lumps with a fork. Add an egg and sugar, then mix well.

Ensure the egg and sugar are evenly distributed throughout the cottage cheese.

Gradually add flour and knead the dough. The amount may vary depending on the cottage cheese’s moisture.

The dough should be thick and hold its shape. Add a pinch of vanilla for aroma.

With wet hands, shape small pancakes and coat them in flour on all sides.

Heat a frying pan until hot, add a little vegetable oil, and fry the pancakes on low heat 3-4 minutes per side.

The pancakes will turn golden and keep their shape well.

Remove cooked pancakes onto a plate lined with paper towels to remove excess oil. Serve with jam, sour cream, or condensed milk. Enjoy!
