Cottage Cheese Pancakes with Rice Flour

Preparation
Step 1
I’m using cottage cheese with 5% fat content. It’s soft and not too wet.
Step 2
To make diet-friendly syrniki, take a convenient deep bowl. Place the prepared cottage cheese into it. Crack an egg into the bowl. Add sugar and a pinch of salt. You can adjust the amount of sugar to your taste.
Step 3
Next, add the starch and rice flour to the bowl. Mix all the ingredients together. If your cottage cheese is wetter, you might need more starch. Check the consistency of the mixture.
Step 4
For aroma, add orange zest. Instead of orange, you can use lemon zest - or skip it altogether.
Step 5
Blend all the mixed ingredients with an immersion blender. The cottage cheese mixture will become smoother, more elastic, and will easily form into a single mass.
Step 6
Using a wet spoon, take a bit of dough and place it into a bowl with rice flour. Coat the dough in flour and shape it into a pancake (syrnik).
Step 7
Heat a pan over medium heat and add a little vegetable oil. Place the formed syrniki into the pan. Cook them for 2–3 minutes on each side over low heat. They should cook through inside.
Step 8
The perfect syrniki will turn a delicious golden color in the pan.

Transfer the ready syrniki onto a plate lined with paper towels to absorb any excess oil. Serve them with berries or sour cream. Enjoy your meal!
