Cottage Cheese Pancakes with Flour

Light, filling, simple, budget-friendly, gluten-free! Cottage Cheese Pancakes with Flour are perfect for a family breakfast. Also great as a snack for school or work. You can make them with ready-made oat flour or grind oats in a coffee grinder.

Preparation
Step 1
First, prepare the necessary ingredients according to the list. You can use not only oat flour but also other gluten-free flours such as corn or rice. The vegetable oil should be refined and odorless. Adjust the amount of sugar to taste. You can replace sugar with any heat-resistant sweetener.
Step 2
Combine cottage cheese with the egg and sugar, and blend with an immersion blender until smooth. If you have packaged (brick) cottage cheese, you don’t need to blend - it’s already moist, soft, and lump-free. Just mix it with the egg and sugar using a spoon.
Step 3
Add oat flour and salt to the cottage cheese mixture. Mix thoroughly until uniform.
Step 4
Let the cottage cheese mixture rest for 10-15 minutes. It should be thick and not runny. If it’s too wet and doesn’t hold shape, add a bit more oat flour.
Step 5
Add raisins to the cottage cheese mixture and mix until evenly distributed.
Step 6
With damp hands (since the mixture is sticky), shape small pancakes. Optionally, coat them in oat flour. I got 8 medium-sized pancakes.
Step 7
In a skillet over medium heat, warm vegetable oil and fry the pancakes on both sides until golden brown.
Step 8
Transfer the cooked pancakes to a plate and serve with sour cream, jam, or preserves. Enjoy!
