Cottage Cheese Pancakes on a Skillet

Golden, juicy, tender, gluten-free! These healthy cottage cheese pancakes on a skillet can be made with any gluten-free flour. Corn flour gives a soft, golden texture.

Preparation
Step 1
You can use not only corn flour, but other gluten-free flours - oat, rice, etc. Vegetable oil should be refined and flavorless. Adjust sugar to taste or use any heat-stable sugar substitute.

Mash the cottage cheese with a fork or, if needed, pass it through a sieve. It should be smooth without lumps. Block-style cottage cheese also works.
Step 3
Beat the egg with a fork until uniform. The white and yolk should be fully mixed.
Step 4
Add the beaten egg, corn flour, baking powder, sugar, and salt to the cottage cheese. Mix thoroughly until smooth.
Step 5
Leave the mixture for 15 minutes. It should be thick and hold shape. If too wet, add a little more corn flour.
Step 6
With wet hands, form small pancakes from the mixture. Optionally, roll them in corn flour for extra coating.
Step 7
Heat vegetable oil in a skillet over medium heat and fry the pancakes on both sides until golden brown.
Step 8
Transfer finished pancakes to a plate and serve. They can be enjoyed with sour cream, fruits, honey, jam, or any topping. Enjoy your meal!
