Step 1
How do you make oven-baked syrniki with whole wheat flour? Prepare the ingredients. Use fresh cottage cheese that isn’t too wet so you don’t have to thicken the batter with extra flour. Very dry cottage cheese is also undesirable, as the syrniki may turn crumbly and a bit dry. Choose the fat content as you like. If you want a lighter option, 2-5% cottage cheese works well. Use whole wheat flour instead of white flour - this makes the syrniki more nutritious.
Step 2
If the cottage cheese is grainy, blend it until smooth and lump-free. This will make the syrniki tender.
Step 3
Add the egg, salt, sugar, and vanillin to the smooth cottage cheese. Beat again until combined.
Step 4
Transfer the smooth cottage cheese mixture to a convenient bowl.
Step 5
Sift in the whole wheat flour and mix well. You can also use other flours (corn, oat, rice) if you like. You may need a little less or more flour - judge by the batter consistency.
Step 6
The batter should be smooth and very thick/sticky; mix it only with a spoon.
Step 7
In this case, it’s convenient to bake the syrniki in silicone molds - they’ll also look neat. If your silicone molds require it, lightly grease them with a little olive oil. Fill the molds with the cottage cheese batter to a height of 1.5-2 cm (about 0.6-0.8 in).
Step 8
Bake in a preheated oven at 180°C (356°F) for 20-25 minutes, until lightly browned. During baking, the syrniki will rise slightly. Time and temperature are approximate - adjust to your oven.
Step 9
Let the finished syrniki cool slightly, then remove them from the molds. From this amount, I got 7 small syrniki.
