A quick, simple, and hearty breakfast that’s good for your body! Cottage Cheese with Egg in a Frying Pan, or cottage cheese omelet, is a great way to add variety to your usual meals. It’s as easy and fast to prepare as a classic omelet but turns out much more filling thanks to cottage cheese. A very interesting and tasty combination.
Preparation
Step 1
It’s best to use room-temperature eggs, so take them out of the fridge in advance. You can also use butter instead of vegetable oil to grease the pan.
Step 2
Mash the cottage cheese with a fork until smooth. I use soft, medium-moisture cottage cheese sold in bricks. If using a more traditional curd, blend it with an immersion blender to remove lumps.
Step 3
Wash, dry, and finely chop the parsley. You can substitute or combine it with dill, cilantro, green onions, or a mixed herb blend.
Step 4
Crack the eggs into a large mixing bowl. If your eggs are small, use four. Add the cottage cheese, paprika, and season with salt and pepper. Whisk thoroughly with a fork, breaking up any cheese clumps.
Step 5
The result should be a smooth and even mixture.
Step 6
Preheat a skillet over medium heat and lightly grease with vegetable oil. Pour the egg-cheese mixture into the pan. Note that the skillet size affects the thickness and diameter - mine is 22 cm (8.5 in), but you can use larger or smaller.
Step 7
Cover with a lid and cook on low heat for about 15 minutes. Optionally, flip the omelet to brown both sides.
Step 8
Once cooked, sprinkle with fresh herbs and serve. Enjoy your meal!
