Preparation
Step 1
Choose cottage cheese of medium moisture. For a smoother filling, you can press it through a sieve. Adjust the sugar amount to taste, or omit it if raisins are very sweet.

Pour hot water over the raisins and let sit for about 10 minutes. Then drain the water and rinse the raisins. This will steam them, making them soft. Lay them on a towel to dry - excess moisture in the filling is not desired.

In a large bowl, combine the cottage cheese, sour cream, sugar, and vanilla. Separate the eggs and add the yolks to the mixture. Mix everything well.

Beat the egg whites in a separate bowl until fluffy and stable.

The egg white foam should hold its shape. Gently fold it into the cottage cheese mixture, keeping the texture airy.
Step 6
Next, fold in the dried raisins.
Step 7
The cottage cheese filling is ready! Use it immediately, as the beaten egg whites will lose volume over time. It’s great for pies, pastries, or dumplings. For dumplings or small pastries, you can reduce the number of eggs.
