Cottage Cheese Doughnuts in Oil

You can use cottage cheese with any fat content, but make sure it’s not too wet. The wetter the cottage cheese, the more flour the dough will absorb.

In a bowl, add sugar and eggs. Mix and then beat until fluffy, and the mixture will become whiter as you beat it.

Then, add the cottage cheese, a pinch of salt, vanilla, and baking soda to the beaten eggs.

Gradually add sifted flour and knead the dough. Adjust the amount of flour based on the consistency of the dough. You might need a bit more or less flour than specified in the recipe, as flour can have varying properties. The dough should come together easily into a ball, but it will be a bit sticky.

In a small, deep skillet, heat vegetable oil. Roll the dough into small balls and drop them into the hot oil. Be careful, it’s very hot! Keep in mind that the balls will expand in size. To avoid the dough sticking to your hands, grease your hands with vegetable oil.

Fry the donuts on low heat for 3-4 minutes. Turn them occasionally to ensure even cooking.
Step 7
Once the doughnuts have expanded and turned a golden, appetizing color, place a few layers of paper towels in a bowl. The extra oil will be absorbed by the towels. The finished cottage cheese doughnuts fried in oil are delicious with berry sauce or sour cream. Enjoy your treat!
