Preparation
Step 1
Prepare the ingredients for the shortcrust crumbs. The butter should be frozen, so take it out of the freezer immediately before using.
Step 2
Sift the flour into a suitable bowl to remove any lumps.
Step 3
Combine the flour with the sugar, baking powder and vanilla sugar and mix well.
Step 4
Coarsely grate the frozen butter directly into the dry mixture.
Step 5
Quickly rub the cold butter into the flour mixture with your fingertips until coarse crumbs form. Work quickly so the butter does not melt. Refrigerate the crumb mixture while preparing the filling.
Step 6
Prepare the filling. Use soft cottage cheese without hard curds; it should be neither very wet nor overly dry. Vanilla sugar can be replaced with a small amount of vanilla extract or vanillin.
Step 7
Blend the cottage cheese with the eggs, sugar and vanilla sugar until smooth. Adjust the amount of sugar to taste.
Step 8
The finished filling should be smooth, creamy and uniform.
Step 9
Line the bottom of a 7-inch baking pan with parchment paper and lightly grease the sides with vegetable oil. Remove the crumb mixture from the refrigerator and add about three-quarters of it to the pan. Press it lightly over the bottom and up the sides to form the crust.
Step 10
Pour in the cottage cheese filling and smooth the surface.
Step 11
Sprinkle the remaining crumbs evenly over the filling.
Step 12
Bake in an oven preheated to 355°F for 30–35 minutes, until lightly golden. Baking time may vary depending on your oven. Let the finished cake cool before removing it from the pan.
Step 13
Cut the cottage cheese crumb cake into portions and serve.
