Cottage Cheese Casserole with Rice Flour

How to bake a fluffy and tender casserole? Don’t expect the same rise as with a yeast cake or sponge. The fluffiness of the cottage cheese casserole depends directly on the baking dish size: the smaller the dish and the higher its sides, the thicker the cottage cheese layer and the taller the final bake.

Preparation
Step 1
Use cottage cheese of any fat content, keeping in mind this will affect the dish’s calories. Adjust the sugar to your taste. You can replace vanilla powder with a teaspoon of vanilla sugar.
Step 2
Take a deep mixing bowl. Add the cottage cheese. Crack in the eggs. Be sure to wash eggs before using, as harmful bacteria can be on the shell even if it looks clean. Use food-safe detergent and a brush if possible. Add sugar, vanilla, and a pinch of salt. Don’t hesitate to add salt to sweet bakes—it enhances flavor.
Step 3
Mix everything until smooth. It’s best to use an immersion blender to make the mixture even fluffier. If using smooth, creamy cottage cheese, a whisk might suffice. If using grainy cottage cheese, blending is highly recommended.
Step 4
Add rice flour. You may need slightly more or less. Mix the batter again until fully smooth.
Step 5
Prepare a suitable baking dish. A round dish of 7 inches (18 cm) in diameter was used. The larger the dish, the flatter the casserole. Grease the bottom and sides with butter or a drop of vegetable oil. Pour in the batter and smooth the top with a spatula.
Step 6
Place the dish in a preheated oven at 350°F (180°C). Bake for 40 to 60 minutes. Exact baking time depends on your oven, dish size, and the properties of your cottage cheese. Check doneness by appearance—the top should be golden. Remove and let cool. The casserole may deflate slightly—this is normal. Carefully remove it from the dish.

Serve with sour cream, jam, or sweetened condensed milk. Enjoy!
